Recipe of the Week: Oven Fried Catfish

Fried foods may be tasty, but they're not great for you and make a huge mess. I hate how frying food leaves a greasy, heavy smell in my kitchen.

This recipe adapted from Southern Living is, I daresay, better than its fried counterpart --- and less messy. It's simple to throw together for a weeknight meal, or to gather together with friends for a fish "fry." I serve it with cornbread and green beans for a good old fashion Southern meal.

Oven Fried Catfish

Ingredients

  • 2 cups cornmeal
  • 2 teaspoons salt
  • 1 tablespoon pepper
  • 8 (3- to 4-ounce) catfish fillets
  • 2 tablespoons Cajun seasoning
  • 1 to 2 teaspoons seasoned salt
  • 2 tablespoons butter or margarine, melted and cooled
  • 1 egg, beaten gently
  • Lemon wedges

Instructions

  1. Combine cornmeal, salt, pepper and Cajun seasoning
  2. Whisk together egg and butter in separate shallow bowl.
  3. Dredge catfish fillets in egg and butter mixture, then dredge in cornmeal mixture.
  4. Place fillets, skin sides down, on a greased baking sheet.
  5. Bake at 400° for 30 minutes or until golden and fish flakes with a fork. Serve with lemon wedges.
