Recipe of the Week: Grilled Salmon Sandwiches with Prosciutto and Avocado

Impress your friends and family with this easy gourmet sandwich. This is the kind of recipe that relies more on great ingredients than great skill, and is one of my go-to recipes for last minute company. It's fresh and full of flavor, and the crispy prosciutto plays off the soft avocado perfectly.

Grilled Salmon Sandwiches with Prosciutto and Avocado

Serves 4

Ingredients

  • 4 rolls (I like Ciabatta, but Kaiser or Sourdough would work well too)
  • 4 salmon fillets
  • 1 lemon
  • 1 clove of garlic
  • 4 tablespoons of mayonnaise
  • 4 slices of prosciutto
  • 1 red onion, sliced
  • 1 avocado, sliced
  • Lettuce or mixed greens of your choice

Instructions

  1. Heat a skillet or grill pan over medium heat. Rub salmon fillets with olive oil, salt, pepper and a squeeze of lemon juice. Grill 6-8 minutes on each side, or until fish flakes with a fork. (You could also do this on the barbecue, but salmon is a little tricky to keep from falling apart.)
  2. Mince garlic and mix with mayo and one tablespoon of lemon juice. Add salt and pepper to taste. Set aside to chill in fridge.
  3.  In a separate skillet, heat 1/2 tablespoon of olive oil over medium heat. Add prosciutto and cook until crisp.
  4. Now it's time to assemble your sandwiches. Slice rolls, spread on garlic mayonnaise and place salmon topped with red onion, proscuitto, avocado and mixed greens on buns.
