Recipe of the Week: Bacon, Egg and Leek Pizza

It may be different from your basic pepperoni, but this non-traditional pizza is a winner.

Growing up, Friday night always meant pizza in the Yokubaitis house. My mom made dough in the bread machine, and then we topped the pizzas with a variety of creative toppings. Pizza meant the end of the school week and the beginning of the weekend, and nothing tastes better than weekends.

As an adult, I've fallen back into the habit of making pizza on Friday nights. I have my mom's well-worn bread machine to make the dough, and my own crazy combinations to try. My boyfriend, Jason, rolls the dough out, and helps me slide it into a piping hot cast iron skillet to get a nice, bubbly black crust before decorating it with a variety of meat, veggies and of course, cheese. We settle in with a movie, or for a few episodes of The Big Bang Theory, and I smile, happy that even in my California adult life, I can still have parts of my Louisiana childhood with me.

Bacon, Egg and Leek Pizza

Adapted from The Pioneer Woman, makes one medium sized pizza. Great for breakfast or dinner!

Ingredients:

  • Pizza dough (Trader Joe's sells it pre-made, or you can make your own)
  • Extra virgin olive oil
  • Kosher salt
  • 4 slices thick-cut bacon, cut into 1-inch pieces
  • 1 leek, rinsed well to remove grit and thinly sliced
  • 1 lb fresh mozzarella cheese, sliced thin
  • Parmesan cheese
  • 2 tablespoons chives, chopped
  • 2 tablespoons parsley, chopped
  • 3 eggs

 Instructions

  1. Preheat the cast iron for 20 minutes in a 400 degree oven. 
  2. Roll crust out. 
  3. In a skillet over medium heat, fry the bacon until cooked but not crisp, then remove and set aside. Pour off most of the grease, but do not clean the skillet. Return it to the stove and, over medium-low heat, saute the leeks until soft, about 3 minutes. Remove the leeks from the heat and set aside.
  4. Pull the hot cast iron out, and sprinkle lightly with cornmeal to prevent dough from sticking.
  5. Gently place the dough in the cast iron. Drizzle it lightly with olive oil and salt. Top with mozzarella, garlic, bacon and leeks.
  6. Crack eggs over uncooked pizza, roughly 2 inches apart.
  7. Cook in 350 degree oven for 20 minutes or until golden brown. 
  8. Remove from oven, and sprinkle with herbs, grated parmesan and black pepper. Serve alongside your favorite Friday night people, and enjoy!
